Do you know those delicious meals you make and you secretly don't want to share with anyone that you even put off the phone, and if the doorbell rings you standstill that you don't even breathe? hahaha

Once upon a time

"Once upon a time, a man sat in his patio savoring his delightful meal while an unexpected neighbor walked in. The man hurriedly pushed his plate under his chair and rapidly wiped his mouth.

He only forgot that his dog who was salivating on his food was not far. The neighbor didn't take long, but long enough for the dog to finish his master's dish.

When the man reached for his plate with precipitation to finish his meal before someone else shows up, he only found an empty plate and the dog licking its mouth.

He was so annoyed that he beat the dog hahaha..."

Back to this bowl of gluten-free pasta with fried cherry tomatoes, it's an easy and delicious pea pasta tossed with pan-fried cherry tomatoes which have been cooked in spices...

I ate this dish and I was what! do I have to make some more? I surely could, but I didn't have more cherry tomatoes lol... so make a huge batch of them because you'll hear "give me some more please..." at your table lol😋

I am glad that we now can have legume as pasta. It's a quick way to eat healthy pasta without having to cook the dry peas. Have you tried them yet?

These pan-fried cherry tomatoes can go with any kind of pasta so go ahead and make your favorite choice.

I opted to fry-pan my cherry tomatoes. If your weather allows, feel free to roast your cherry tomatoes. Just note that the taste will not be the same, because dry heat will reduce the tomato juice.

The Best Spices for Your Gluten-free Pasta & Cherry Tomatoes Dish

What makes this dish so delicious are the spices. Cooking them in a pan brings out their flavors even more.

Here's what I used:

  • fennel seeds,
  • fresh garlic,
  • ginger,
  • turmeric,
  • cayenne pepper
  • smoked and sweet paprika,
  • I added green onions and fresh basil at the end of cooking.

To get the best flavors, use fresh ginger, turmeric and garlic. Definitely, you don't have to use all these spices if you don't have them in your pantry. I would have gone for garam masala if I had no other spices. but try to have garlic and ginger if possible.

Press on the cherry tomatoes to release some juice to make the sauce. Don't press too much, we don't want to make a sauce here.

You'll love to have that whole cherry in your mouth.

Green onions added in cooking cherry tomatoes

If you want to try the dry pea pasta, don't cook them completely. I like leaving the cooking to be done by the hot liquid. And another point, if you have to drain them, keep the liquid for future use in another recipe.

I cooked 2 cups dry pea pasta in 3 cups of water, left them to boil as I stirred now and then. When they were still not completely cooked, I turned off the heat and left the pea pasta to absorb the liquid.

Once you're done pan-frying the cherry tomatoes, add the cooked gluten-free pasta. Then mix gently before sprinkling with fresh basil. Serve immediately, the pasta will cool the cherry tomatoes as you enjoy yourself.

Pan-fried cherry tomatoes with gluten-free pasta feature two main ingredients, yet it's a very flavorful and awesomely delicious dish. Spiced up with fresh basil, turmeric, ginger garlic, and fennel seeds, not forgetting smoked and sweet paprika.

Ingredients

Spicy fried cherry tomatoes

  • 1 teaspoon fennel seeds
  • 3 cloves of garlic
  • 1 small piece of ginger
  • 1 small turmeric
  • 1 onion
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika & sweet paprika each
  • 3 handfuls of cherry tomatoes
  • pinch of salt
  • 1 cup green onions
  • 1 chili pepper
  • cayenne pepper
  • a handful of fresh basil leaves

Pasta

  • 3 cups boiling water
  • 2 cups dry pea pasta ( any pasta will do)
  • pinch of salt

Instructions

  • Put fennel seeds in a pan or a saucepan and turn on the heat to medium-low, cover for 5min
  • Dice the garlic, ginger, turmeric, and onions and bring them in the pan and increase the heat to medium-high stir and cover for 4 mins
  • Add the olive oil, stir and bring the heat to medium, cover and let cook for 4 mins
  • Sprinkle both paprikas and the salt, stir and then bring in the cleaned cherry tomatoes
  • Stir well and cover for about 6-8 mins
  • Press gently on the cooking cherry tomatoes, just a little don't smash them, cover and let them cook for 4mins
  • Add fresh green onions, stir very very gently.
  • Put off the heat.
  • Sprinkle generously with fresh basil leaves

Pasta

  • While cooking the cherry tomatoes, bring 3 cups of water to boil in your boiler or in a saucepan
  • Put a saucepan on a high heat
  • Pour 3 cups of boiling water then add the 2 cups of pasta, stir well
  • Add salt and stir and boil them for about 3 mins
  • Stir again and cut off the heat, leave the pasta to finish cooking in the hot water.
  • The pasta will absorb much of the liquid if more is left, drain and save the liquid for a future use

  • Bring the pasta in the spicy fried cherry tomatoes and fold in together very gently
  • Taste to adjust the seasoning
  • Serve immediately
