- vegetable peeler
Cozy cucumber & butter beans salad
- 1 clove of garlic
- 1 small piece of ginger
- ½ cup bell pepper
- ½ cup cilantro
- 1 long thin cucumber
- 1 cup canned butter beans
- 1 tbsp cold-pressed oil of your choice
- 1 tbsp balsamic vinegar (you can substitute)
- Pinch of salt
- 3 tbsp yogurt sugar-free (I used plant-based)
- dust of black pepper
- mince the ginger & garlic together and put them in a large salad bowl
- dice the bell pepper, as well as the cilantro, add them in the salad bowl
- Using a vegetable peeler, get the cucumber ribbons and add them in the bowl
- Add the butter beans
- Take a spoonful of butter beans, mash them with a folk and add them to the bowl
