mince the ginger & garlic together and put them in a large salad bowl
dice the bell pepper, as well as the cilantro, add them in the salad bowl
Using a vegetable peeler, get the cucumber ribbons and add them in the bowl
Add the butter beans
Take a spoonful of butter beans, mash them with a folk and add them to the bowl
Add the rest of the ingredients and fold everything together.
Taste to adjust the seasoning, serve and enjoy

You can eat this salad as the main meal as it's very filling...Make only what you can consume at once, if you store this salad for more than 1 hr. the cucumber will give out water and you'll end up with a lot of liquid...
