Ingredients

Cozy cucumber & butter beans salad

  • 1 clove of garlic
  • 1 small piece of ginger
  • ½ cup bell pepper
  • ½ cup cilantro
  • 1 long thin cucumber
  • 1 cup canned butter beans
  • 1 tablespoon cold-pressed oil of your choice
  • 1 tablespoon balsamic vinegar (you can substitute)
  • Pinch of salt
  • 3 tablespoon yogurt sugar-free (I used plant-based)
  • dust of black pepper

Instructions

  • mince the ginger & garlic together and put them in a large salad bowl
  • dice the bell pepper, as well as the cilantro, add them in the salad bowl
  • Using a vegetable peeler, get the cucumber ribbons and add them in the bowl
  • Add the butter beans
  • Take a spoonful of butter beans, mash them with a folk and add them to the bowl
  • Add the rest of the ingredients and fold everything together.
  • Taste to adjust the seasoning, serve and enjoy

You can eat this salad as the main meal as it's very filling...
Make only what you can consume at once, if you store this salad for more than 1 hr. the cucumber will give out water and you'll end up with a lot of liquid...
