I do hope you're managing your pain today. Let's together fight RA with this beautiful purple potato recipe. A super simple and easy recipe yet full of health benefits

Although it's not common to find these purple potatoes, here in France. While Falls comes, I like cooking with them quite often.

I'd had shun from potatoes in general for many years. I had bought in the misinformation out there that potatoes make us fat.

If you're like me, please embrace potatoes as a whole food loaded with vitamins and minerals. Specifically, the purple potato as it is loaded with antioxidants and phytonutrients (thanks to their beautiful color) that will help you fight inflammation.

Potatoes, in general, can help you lower your inflammation, improve your digestion, and strengthen your bones. This is because potatoes are rich in Potassium, Calcium, Iron, and Phosphorus

However, you'll only acquire these benefits depending on how you cook potatoes. Deep frying will definitely not be the best way to cook potatoes when we're looking to reducing inflammation lol!

With this weight loss purple potato recipe you're giving your body Vitamins; C, B6, B9, E, A, K, and the minerals stated in the potatoes. What a better way to heal!

This purple potato recipe is made with whole ingredients that will help your burn by burning fat as well as keep you full. A perfect weight loss potato recipe

I preferred steaming my veggies to maintain their nutrients and color. I recommend you eat your potatoes with their skin. Eating potato skin you'll get fibers and minerals like iron which are highly concentrated on the skin.

Make a sauce of your taste, as long as it remains healthy. Otherwise, you can just do like me. Squeeze in a lemon, add some spices, and some cold-pressed olive oil.

Ingredients

  • 6 small purple potatoes or any other variety
  • 2 medium carrots
  • 2 a head of broccoli & a head of Romanesco
  • 2 medium onions
  • 2 cloves garlic
  • small piece ginger
  • handful dried prunes
  • handful fresh mint any herb of your choice
  • pinch cayenne pepper
  • pinch salt
  • 1 lemon
  • 2 tablespoon Cold pressed olive oil

Instructions

  • Clean all your veggies. Mince the garlic and set it aside. Steam the potatoes with broccoli & romanesco
  • Slice the carrots very thinly using a very sharp knife if not use a mandolin. Do the same with onions.
  • After the potatoes, broccoli & romanesco have steamed, about 10 mins let them cool.
  • During that time, add diced onions in a pan and let them cook for 2 mins on moderate heat 
  • Add in the ginger, garlic and other spices and stir, stir for a minute, bring in the carrots and stir for 2 mins. You can add a tbs of the steaming water. Cut off the heat.
  • Chop your herbs.
  • Squeeze the lemon in a small bowl, add the olive oil, and salt to make a vinaigrette. 
  • Serve your veggies in a plate or bowl, and sprinkle the vinaigrette or all over the dish.

Notes

Steam your veggies to your preferences. I like them al dente( slightly cooked). 
The quantity here doesn't really matter! Eat a lot of veggies lol, you'll thank them in the future.
