Sweet Frozen Green Peas with Brown Rice

You can never go wrong with frozen peas, they're our go-to veggies when we are running out of time or when we have no fresh veggies. Fresh turmeric, garlic, and sauteed onions and carrots make this sweet frozen green peas with brown rice a comfort delicious dinner.

Even if it's spring here, fresh green peas are very pricey and only a few farmers who will sell them. So we have adopted frozen peas in almost every recipe we make that calls for green peas.

This dinner recipe is extra sweet, easy and quick to prepare and especially if you have some leftover rice. Every time I make this recipe my daughter goes like…

"mmmh, I love this food, mama can you make this again tomorrow?" Sometimes she'll warn us not to have a second helping because she needs everything for herself lol.

So to say, this sweet frozen green peas with brown rice is very convenient for your kids as long as you don't add too much fresh chili, which you can chop and add on your plate instead.

Frozen peas are picked at the beginning of the season and frozen just a few hours after, so they are super tender and sweeter than most fresh peas. They also demand you less work.

Green peas, in general, are a good source of vitamins. They're high in Vitamin K, Folate, B1, B2, B3, B6, and C. Though in small amount, you'll get vitamin E.

You'll get minerals like Manganese, Copper, Phosphorus, Molybdenum, Zinc, Magnesium, and Iron.

Green peas are also an excellent source of proteins and fiber.

Health benefits of green peas

They're low in Glycemic Index which adds them to a list of food that controls blood sugar in your body.

Green peas have fiber that will help by protecting you from having digestive issues.

They do contain phytonutrients that improve your health. Coumestrol is a polyphenol in peas that has been studied to reduce the risk of stomach cancer.

Green peas have antioxidants and anti-inflammatory properties which will improve your health and help combat several diseases.

How to cook frozen green peas

Actually, you don't have to cook frozen green peas as such. If you want to make a stew with frozen peas, cook your onions, garlic, and ginger first.

As they cook, boil a good amount of water, then in a bowl or a saucepan, pour your frozen peas. Cover the green peas with the boiling water to unfroze them for JUST a few seconds.

Get a spatula or a spoon to stir the peas and drain the water immediately.

Now bring your peas in the saucepan with onions, stir well for a minute or two, add salt. Cover the saucepan, cut off the heat, that's it. Add some fresh mint if you have some.

For this dinner of sweet frozen peas with brown rice, the peas are stirred just before serving. Which help them retain their firmness and their bright color.

I folded everything with my creamy green banana sauce.

Sweet frozen green pea with brown rice

You can never go wrong with frozen green peas, they're easy to use and sweeter than fresh peas. You don't have to cook them as such and they make this recipe very simple. Green peas pairs well with carrots which makes this dinner extra sweet. Your kids will love this recipe.

Ingredients

  • 2 medium onoins
  • 2 cloves of garlic
  • 1 piece of fresh turmeric
  • 2 tablespoon olive oil
  • 2 medium carrots
  • 1 cup cream of your choice or just boiling water
  • 2 cups cooked brown rice or white rice
  • 2 cups frozen green peas
  • pinch salt
  • 1 fresh chili

Instructions

  • Dice your onions, garlic, and turmeric and bring them in a warm saucepan.
    Add olive oil and stir. Cover to let them cook for 6 mins at medium heat, but keep on stirring now and then.
    Meanwhile, clean and dice your carrots into small cubes. I don't peel my carrots.
    Now bring the carrots into the pan and stir to mix well. Put the rid on and let the carrots cook for about 7 mins. Don't forget to keep on stirring.
    As the carrots cook, bring about 3 cups of water into a boiling point.
    Put the frozen green peas into a bowl and pour the boiling water on them.
    With a spatula or a spoon stir the peas in the water and drain the water immediately.
    Add cream of your choice or boiling water once the carrots have become tender. Fold in well and cover for a minute or two. I added my creamy green banana sauce.
    Bring in the rice and stir well, let it warm for a minute before adding the peas.
    Salt your meal, add any pepper if you desire.
    Cut off the heat.
    Chop your fresh chili and add it to this sweet dinner. I like removing the seed but that's optional.
    There you go, a sweet frozen peas dinner with brown rice. Bon appetit.
