- 1 medium beet
- 2 cups water
- 3 Medjool dates
- a small piece of fresh ginger
- 1 cup silken tofu
- 1 tablespoon baobab powder
- ½ or 1 tablespoon raw cacao
- 3 oz dark chocolate or squares
- ½ teaspoon cinnamon
- some freshly grated nutmeg
- a small pinch of sea or Himalayas salt
Instructions
- Clean and dice the beet (it's not necessary to peel if it's a new harvest).
- Put the diced beet in a pot and add water. Bring to a boil and simmer for 15 mins.
- Chop finely or grate the ginger.
- Prepare the dates by removing the seeds/pits.
- Once the beets are cooked, remove them from the heat and let them cool. Use the beets with their cooking water. Do not use all the water at once!
