Equipment

Ingredients

  • 1 medium beet
  • 2 cups water
  • 3 Medjool dates
  • a small piece of fresh ginger
  • 1 cup silken tofu
  • 1 tablespoon baobab powder
  • ½ or 1 tablespoon raw cacao
  • 3 oz dark chocolate or squares
  • ½ teaspoon cinnamon
  • some freshly grated nutmeg
  • a small pinch of sea or Himalayas salt

Instructions

  • Clean and dice the beet (it's not necessary to peel if it's a new harvest).
  • Put the diced beet in a pot and add water. Bring to a boil and simmer for 15 mins.
  • Chop finely or grate the ginger.
  • Prepare the dates by removing the seeds/pits.
  • Once the beets are cooked, remove them from the heat and let them cool. Use the beets with their cooking water. Do not use all the water at once!
  • Put all the ingredients in a high-speed blender and blend till smooth.
  • Taste for seasoning and serve in mugs.
  • Sprinkle with cinnamon, nutmeg, chocolate, or chocolate chips.

Notes

  • You can use already-cooked beets or store-bought beets; in this case, add hot water to the blender. 
  • You can use hot milk instead of water. Start with one cup, then add gradually as you blend till the chocolate is smooth and thick. 
  • Baobab can be found in organic or African groceries.
