Ahem, ahem! I baked oatmeal with blueberries & zucchini!

I mean, I BAKED!!! LOL.

I am terrible when it comes to baking. It's too much of mathematics and chemistry that I just don't get the hang of!

But, I'm a foodie, and a creative one at that. I always want to create something.

This baked oatmeal and blueberries combo, with a hint of zucchini is quite simple, even for a beginner.

If you're a baker, this will be a walk in the park for you. You'll be able to bake it with your eyes closed! hahaha.

I think am laughing too much, so let me straighten myself up and get focused!

We love oats over here. They're easy to make into so many delicious meals, such as:

  • instant porridge,
  • gluten-free pancakes,
  • even fibre-rich smoothies
  • and of-course, you can bake them too!

I had an extra zucchini that I wanted to finish. Guess where I had to put it! No one in your family will notice it, but it will add nutrition to your baked oats recipes.

I love blueberries, and this in this recipe I used wild frozen blueberries. They're small in size than the cultivated ones and they're tastier.

Besides, they're readily available and more budget-friendly than fresh blueberries.

I deliberately made this baked oats and blueberries combo in a way that even little kids can be able to eat it.

We really enjoyed this baked oatmeal with blueberries. It's soft, with moist, and sweet. You'll love it, and your kids will enjoy it too.

Health Benefits of Oats and Blueberry Combo

  • First, oats are rich in fiber. Both soluble and insoluble fiber. Fiber is essential for feeding your gut microbiome and thus enhancing the health of your gut as well as your overall health.
  • They're rich in minerals like Manganese, Molybdenum, Phosphorus, Copper, Zinc, and Iron.
  • A good source of vitamin B1, Biotin, and Pantothenic Acid.
  • Due to the proteins in oats and the fiber, oats are filling. When they get into the body, oats absorb water and they swell leaving you full for hours.
  • This is a good thing for someone who wants to lose weight or control weight.
  • Oats helps in bowel movements, They can help in case of constipation.

Health Benefits of Blueberries

  • Blueberries are very low in calories, composed of 84% of water and less sugar.
  • If you're looking for food with vitamin C, K, and Manganese, blueberries would be the best fruits to go for.
  • Blueberries are one of the richest sources of anthocyanins among fruits. Anthocyanins being the pigments that give the red, purple and, dark color to fruits and vegetables.
  • Anthocyanins have been linked to many health benefits in our bodies. They help fight and prevent diseases and inflammation. They're good anti-cancer fruits.
  • In general, blueberries will improve your immune system which will help you fight diseases and maintain good health.
  • In a report including about 200 adults with Rheumatoid Arthritis, it was reported that blueberries intake improved their symptoms. This is because blueberries are concentrated with anti-inflammatory phytonutrients.

Equipment

  • Blender
  • large bowl
  • medium baking tin

Ingredients

Baked Oats with Blueberries & Zucchini

  • 1 cup plant-based milk
  • 2 cups finely diced zucchini
  • 21/2 tablespoon olive oil or coconut oil
  • 1 cup frozen wild blueberries
  • 7 pitted dates
  • 2 cups rolled oats
  • 2 tablespoon Chia seeds
  • 1 teaspoon salt
  • 1 teaspoon cinnamon powder

Frozen red fruit

  • 3 cups a mix of frozen red fruits or berries
  • ½ cup water

Instructions

Baked Oats with Blueberries & Zucchini

  • Turn your oven on at 180°
  • In a large bowl put the oats, chia, salt, and cinnamon
  • Pit the dates
  • In your blender blend into a smoothie the diced zucchini, dates, milk, berries, & 2 tablespoon of oil
  • Pour the blended mix on the oats and mix well
  • Oil your baking tin with the remaining oil, pour the batter and bake for 20 mins.

Frozen red fruits

  • In a saucepan bring 3 cups of frozen fruits
  • Add ½ water
  • Cook them covered either in very low heat till they unfreeze or use high heat but cook them very slightly.
  • Serve on the baked oats with blueberries & zucchini

Notes

I normally use cinnamon sticks that I break into small chunks, and blend them directly with other ingrediens.

      Hi Arlene, thank you for visiting and I hope you subscribed for more healthy recipes... I actually can't write about every ingredient as it demands a lot of research. I also consider some ingredients as optional (chia in this recipe) so I don't get into too much in detail in a given recipe while I can feature that same ingredient in another given recipe.

    I think Arlene was saying that chia seeds are not listed in the ingredients but is listed in step 2 of the recipe and in the pictures as well. Either way the recipe looks tasty and i can't wait to try it. Thanks for sharing!

      For the chia seeds, I added 2 tbsps.
