Ingredients

Baked Oats with Blueberries & Zucchini

  • 1 cup plant-based milk
  • 2 cups finely diced zucchini
  • 21/2 tablespoon olive oil or coconut oil
  • 1 cup frozen wild blueberries
  • 7 pitted dates
  • 2 cups rolled oats
  • 2 tablespoon Chia seeds
  • 1 teaspoon salt
  • 1 teaspoon cinnamon powder

Frozen red fruit

  • 3 cups a mix of frozen red fruits or berries
  • ½ cup water

Instructions

Baked Oats with Blueberries & Zucchini

  • Turn your oven on at 180°
  • In a large bowl put the oats, chia, salt, and cinnamon
  • Pit the dates
  • In your blender blend into a smoothie the diced zucchini, dates, milk, berries, & 2 tablespoon of oil
  • Pour the blended mix on the oats and mix well
  • Oil your baking tin with the remaining oil, pour the batter and bake for 20 mins.

Frozen red fruits

  • In a saucepan bring 3 cups of frozen fruits
  • Add ½ water
  • Cook them covered either in very low heat till they unfreeze or use high heat but cook them very slightly.
  • Serve on the baked oats with blueberries & zucchini

Notes

I normally use cinnamon sticks that I break into small chunks, and blend them directly with other ingrediens.
