Do you want a hearty, crunchy salad with sweet-savory flavor? Here you've got a kale salad recipe with sun-dried tomatoes, tossed together to make a fabulous healthy kale salad.

Brighten up your spirit with a kale salad recipe with sun-dried tomatoes!

I don't know if it's because of its rarity here in France, but my spirit brightens every time I see kale in the farmer's market.

The season has just started, and I know I am going to eat a lot of kale this winter, and you, do you eat kale?

Kale is versatile, you can have it savory or sweet with fruits. You can also combine the savory and sweet flavors to have a very delicious kale salad, like this one.

However, kale leaves are tougher than lettuce and other greens, you need to soften them before you can get to enjoy a kale salad.

I don't opt for cooking kale as the heat will destroy some antioxidants like vitamin C, polyphenols, and to some extent some B-carotene.

However, you can steam kale leaves if you're afraid of oxalates!

How do you prepare a kale salad recipe with sun-dried tomatoes?

Marinated kale leaves, garlic with sun-dried tomatoes

First, buy fresh kale leaves. The leaves should be firm and vigorous!

Check for our friendly small animals, like insects.

Next, clean your leaves and shake off the water.

I normally tear the leaves with my hand, by pulling off the kale leaves leaving the hard parts on the ribs. Those ones I use them to make a vegetable broth.

But you can use a knife to cut off the leaves from the stems. Kale stems are hard to chew.

Bring the kale leaves in a large bowl. Then slice your sun-dried tomatoes into small chunks and add them to the kale leaves.

Add a diced clove of garlic, but it's optional.

Add some vinegar and some olive oil.

Now use your hand to massage the kale and sun-dried tomatoes together.

Don't shy on this step, you need to squeeze the kale leaves in your hands till the leaves become dark green.

The massage will soften the kale, it'll also transfer the flavor and salt from sun-dried tomatoes to kale leaves.

Now you can bring in the rest of the ingredients and toss them together.

Don't add salt yet!

Cover the bowl with a towel and leave the salad to marinate for at least 10 mins.

This kale salad is hearty & crunchy with fabulous flavors. The sweet-savory taste is well balanced.

What are the health benefits of a kale salad with sun-dried tomatoes?

Kale is known as a superfood. By this, it means that it's a functional food that can help your body by preventing diseases.

Placed among the top foods with lutein, kale will also supply you with a high amount of Vitamin K, A, C, and B6.

Kale has a good amount of Manganese, Copper, and Potassium.

Lutein will protect you from light and oxygen damage that might occur in your eyes by blocking the blue light and free radicals.

Kale has glucosinolates which are cancer-protective.

Making kale salad with sun-dried tomatoes

Vitamin A & C

This salad is jam-packed with vitamin C and A. Apples, bell pepper, kale, and radishes will supply you with a lot of vitamin C. This will boost your immune system and ward off diseases.

Carrots and kale will give you all the vitamin A you need for the day.

Omega 3

Kale and nuts will help you protect your heart with their supply of omega 3. Omega 3 is essential in your body, however, your body doesn't synthesize it.

Dietary fiber

This kale salad recipe is loaded with dietary fiber that will help you with digestion issues. Fiber will also feed your gut microbiome which will, in turn, produce byproducts that are essential for your health.

A kale salad recipe with sun-dried tomatoes is a meal on its own. You can have a large serving and you're packed with lots of nutrients to keep you full till the next meal.

Ingredients

A kale salad recipe with sun-dried tomatoes

  • 3 large kale leaves
  • 1 clove of garlic, diced
  • 5 sun-dried tomatoes sliced into small pieces
  • 4 radishes sliced with a vegetable peeler
  • 1 medium carrot, grated
  • ½ bell pepper, diced
  • ½ cup mixed nuts of your choice
  • 1 medium red apple sliced into thin wedges
  • 1 tablespoon ACV
  • 2 tablespoon healthy oil
  • pinch of salt if necessary

Instructions

A kale salad recipe with sun-dried tomatoes

  • Tear or cut kale leaves into small bites and put them in a large salad bowl
  • Add diced garlic together with sun-dried tomatoes in the bowl
  • Add the oil & the vinegar
  • Using your hands massage the kale together with sun-dried tomatoes by squeezing them till the kale leaves reduce the size and turn dark green
  • Now, bring all the other ingredients in the bowl apart from the salt, and toss them together to make a fabulous salad
  • Cover the bowl with a kitchen towel and let the salad marinate for at least 10 mins
  • Taste before serving, add salt ONLY if it's necessary!
