  • 3 large kale leaves
  • 1 clove of garlic, diced
  • 5 sun-dried tomatoes sliced into small pieces
  • 4 radishes sliced with a vegetable peeler
  • 1 medium carrot, grated
  • ½ bell pepper, diced
  • ½ cup mixed nuts of your choice
  • 1 medium red apple sliced into thin wedges
  • 1 tablespoon ACV
  • 2 tablespoon healthy oil
  • pinch of salt if necessary

Instructions

A kale salad recipe with sun-dried tomatoes

  • Tear or cut kale leaves into small bites and put them in a large salad bowl
  • Add diced garlic together with sun-dried tomatoes in the bowl
  • Add the oil & the vinegar
  • Using your hands massage the kale together with sun-dried tomatoes by squeezing them till the kale leaves reduce the size and turn dark green
  • Now, bring all the other ingredients in the bowl apart from the salt, and toss them together to make a fabulous salad
  • Cover the bowl with a kitchen towel and let the salad marinate for at least 10 mins
  • Taste before serving, add salt ONLY if it's necessary!
