  • Salad bowl
  • Salad spoons

Ingredients

  • 2 cups cooked quinoa
  • 1 cup canned lupini beans (drained)
  • 1 cup mix types of olives
  • a handful of ripe cherry tomatoes
  • a handful of grapes (red or green)
  • a medium bell pepper
  • fresh basil leaves (or herbs of your choice)
  • some salt
  • 2 tablespoon cold-pressed olive oil
  • 1 tablespoon apple cider vinegar
  • 1 lemon

Instructions

  • Clean the cherry tomatoes, bell pepper, and lemon
  • Bring all the dry ingredients in a salad bowl
  • Add the olive oil with the vinegar
  • Squeeze the lemon and add the juice to the salad
  • Add some salt, be careful as olives are generally salted
  • Using a big salad spoon, mix the quinoa salad gently
  • Serve and enjoy this Mediterranean salad
