The best Mediterranean quinoa salad with olives
Equipment
- Salad spoons
Ingredients
- 2 cups cooked quinoa
- 1 cup canned lupini beans (drained)
- 1 cup mix types of olives
- a handful of ripe cherry tomatoes
- a handful of grapes (red or green)
- a medium bell pepper
- fresh basil leaves (or herbs of your choice)
- some salt
- 2 tablespoon cold-pressed olive oil
- 1 tablespoon apple cider vinegar
- 1 lemon
Instructions
- Clean the cherry tomatoes, bell pepper, and lemon
- Bring all the dry ingredients in a salad bowl
- Add the olive oil with the vinegar
- Squeeze the lemon and add the juice to the salad
- Add some salt, be careful as olives are generally salted
- Using a big salad spoon, mix the quinoa salad gently
- Serve and enjoy this Mediterranean salad
