Enjoy this deliciously sweet snow pea recipe. It's crunchy and full of flavors. A quick and easy vegetable soup for dinner.

Snow pea or snow peas are those veggies that, if you're handed a basket full of them, you would roll your eyes, not knowing what to do with them! But now you have here a new snow pea recipe.

Many snow pea recipes out there just fry snow peas in butter, but here I want you to enjoy this recipe full of dynamic flavors. If you have tried this spring onion soup, then you'll love this snow peas recipe too.

What are snow peas?

  • You may be wondering, "What are snow peas?" They're flat peas that the whole pods are eaten, they have very small to no peas in the pods.
  • Here in France, snow peas are referred to as "mangetout" because you eat everything.
  • Snow peas contain natural sugar, so they are sweet and tasty to be eaten raw, they're crisp and crunchy.
  • In most recipes, you'll find them blanched and then fried in butter.

In this snow pea recipe, the snow peas are just tossed in an already-cooked stew at the last minute. This is a great way to maintain their crunchiness.

This snow peas recipe has a riot of flavors. I added some fresh, finely chopped ginger at the end, plus the lime juice and fresh herbs that make every bite a burst of flavor.

I actually ate two bowls of this vegetable soup, and I could have gone for the third serving, lol. It's a weight-loss vegetable soup that you can eat an extra serving without guilt.

A simple yet very healthy snow peas vegetable soup that is satisfying on its own or served with some rice. It's an ideal light dinner that you can prepare ahead and just heat at dinner time.

How to cook this snow peas recipe

The secret of this snow peas recipe lies in the spices and green banana.
Green banana adds some creaminess to dishes. I like adding it to dishes that call for creams.

  • Start by cooking spices ( I used fennel seeds, ginger, oregano, and basil dry leaves) together with the green banana till the banana coats on the base of your saucepan.
  • Let it brown without burning!
  • Add the carrots, then water. Use a wooden spoon to scrape the green banana sticking on the saucepan.
  • Then add dry figs and radishes. After eating a lot of savory rhubarb dish, I've been left with lots of radishes that I add to this snow pea recipe.
  • I use frozen snow peas. Frozen snow peas are easy to use, but you can use fresh snow peas, which you have to remove the ends.
  • Remove the snow peas from the freezer and leave them to thaw.
  • Add the snow peas to the already-cooked vegetable soup and cut off the heat. Stir, add fresh herbs, and stir again. Serve the snow pea vegetable soup while still hot.

Nutritional Value of Snow Peas

  • Snow peas are very low in carbs and have a good amount of protein.
  • They're a good source of dietary fiber and have minerals such as Potassium, Calcium, Copper, Iron, Magnesium, Manganese, Selenium, and Zinc.
  • Snow peas will provide you with vitamins such as vitamins A, B1, B2, B3, C, E, and K, Folates, Niacin, Pantothenic acid, Riboflavin, and Thiamin.
  • These amazing veggies also have antioxidants like Carotene, Lutein, and Zeaxanthin, which are two essential nutrients that protect your eyes against Macular Degeneration and Cataracts.

Where to buy green bananas

  • You'll get green bananas from African or Asian stores.
  • Store them in the fridge wrapped with kitchen paper so that they don't ripe. This also makes peeling easy. When the banana is cold, it doesn't stick or stain your hands… at least, this is my experience.

Can I skip the green banana?

Yes, you can substitute the green banana with either sweet potatoes, potatoes, pumpkins, tofu, or add more carrots (in a vegan version).

However, your vegetable soup will not be as creamy as with green bananas. To thicken it up, mash some cooked potatoes or sweet potatoes and put them back into the soup.

What to serve with snow peas soup

  • This vegetable soup goes well with rice, quinoa, buckwheat, or just a piece of bread.
  • You can add some proteins like tofu or beans to make it a whole meal.

How to store this vegetable soup

  • You can make this snow pea recipe as a meal prep.
  • Keep it in a container and keep it in your fridge for up to 4 days
  • When it's time to serve it, just warm it in a saucepan for about 5 minutes.

Ingredients

Snow peas side dish recipe

  • 1 tablespoons basil and origan dry leaves
  • ½ tablespoons fennel seeds
  • 1 thumb fresh ginger
  • 3 cloves garlic
  • 1 green banana
  • 1 tablespoon cold-pressed olive oil
  • 2 fresh green onions or scallions
  • 2 carrots (medium size)
  • 2 dried figs
  • pinch salt
  • 3 cups vegetable broth or boiling water
  • 1 cup radishes
  • 2 cups frozen snow peas or more (thawed)
  • a handful of fresh cilantro leaves and/or drill
  • 1 fresh pepper

Instructions

You can chop your veggies ahead or chop & dice them as you cook

  • If using water bring about 4 cups of water to boil.
  • For the broth, make sure it's in room temperature
  • In a medium size saucepan place the dry herbs and put the saucepan on medium-high heat
  • While heating the herbs, peel the green banana, dice it into very small cubes,(fine brunoise) and put them in the saucepan, stir.
  • Add the olive oil and stir again.
  • Let the green banana cook for about 6 minutes, keep on stirring now and then. It's going to stick on the pan.
  • Meanwhile chop the scallions or green onions
  • Add the scallions in the saucepan, stir well and cover, stir now and then for about 3 mins.
  • Batonnet the carrots (cutting the carrots lengthwise) and dice the dried figs into small pieces
  • Add the carrots and the figs in the saucepan, add salt. Stir and cover for 2 mins.
  • Add the vegetable broth or water till you cover everything with water. Cover and bring to boil.
  • Prepare the radishes by cutting off the extreme ends.
  • Add the radishes in the saucepan, stir together and cover for a 1-2 minutes.
  • Bring the thawed snow peas in the saucepan, stir well and cut off the heat.
  • Dice or grate the garlic and ginger. Add them to the snow peas.
  • Chop your fresh herbs, the fresh pepper, and add in the saucepan, stir everything together , taste to adjust the seasoning.
  • Squeeze the lime and add the juice just before serving.
  • This snow peas goes very well with rice, quinoa, buckwheat, or a loaf of bread
