Overnight Oats Topped with Persimmon Fruit

We all love some thing delicious to start the day. And what better way to get going than fruit-topped cereal. right! I'd love for you to try out your overnight oats topped with persimmon fruit. This cinnamon-spiced luscious oats breakfast is perfect to start a new day with a new song in your heart! The jelly-like texture of a ripe persimmon loaded with sweetness will definitely win your heart!

Vegan overnight oats with persimmon fruit might be new to you, but don't just stop there, you need to dive in and swim in the deliciousness of a well-ripped persimmon which makes this oats breakfast awesomely delicious.

Persimmon fruit go perfectly well with overnight oats.

My first encounter with persimmon fruit some years back, was in an open-air market. They were gorgeously ripe, they seemed fragile to touch them, the translucent skin made me figure the interior of the persimmon.

I purchased a lot of three after asking the seller what they were and went home without having any clue what to expect! 

The jelly-like overripe persimmons fruits were so yummy, I didn't even use a spoon to scoop of but rather dived on the fruits. The jammy sugary juice covering my whole mouth! sorry, those persimmons were a little heaven.

That's how I fell in love with the hachiya persimmon.

There're two types of persimmon fruits that are commonly commercialized. 

Fuyu persimmon that's round and short like a tomato. It can be eaten while still firm.

Hachiya persimmon, on the other hand, is heart-shaped with a silky smooth pulp, it's jammy-sweet when ripe, the skin almost coming off when over ripped. This type of persimmon has to be eaten ONLY WHEN RIPE otherwise its bitter taste will put you off from eating persimmon fruit.

To know if persimmon is ripe (hachiya) check on the skin, it should be orange, translucent, and feel the softness of the fruit.

What are the health benefits of persimmon fruit?

A persimmon a day can save your heart better than an apple! Persimmon was compared to an apple and was found to contain more dietary fiber, minerals, and phenolic compounds than an apple.

Persimmon fruit is rich in vitamins A & C, which will aid in reducing free radicals in your body.

They contain phytonutrients, flavonoids, and antioxidants which are cancer-protective, anti-inflammatory, and protect eyes by filtering the sunlight, among others.

How to make this vegan overnight oats with persimmon fruit

I prefer toasting our oats in the evening and add spices to make them more flavorful than the classic overnight oats.

  • Toast your oats in a saucepan with spices of your choice, you'll smell fragrant as the spices and oats toast.
  • Add water and stir then cover for the night. See the recipe card.
  • In the morning warm your oats and add some milk. Then top as desired like in this overnight oats with mango.

Can overnight oats go bad?

Not if left out for a night, but because of the fruits you need to store it in the fridge after.

Oats on their own will not go bad but rather ferment if they were not subjected to heat. However, when you add fruits, the rotting will take place after a day especially in a warm kitchen.

 I don't keep my overnight in the fridge. Just leave them on your kitchen counter covered for the night. 

However, the overnight stored in the fridge can go up to 5 days along as it's covered.

Can vegan overnight be reheated?

Oh yes, We don't appreciate cold breakfast over here especially in winter. That's why I don't store our overnight oats in the fridge, it's time-consuming to reheat them when they come directly from the fridge.

That's the reason why I make my overnight oats in a saucepan, to facilitate the moring work. 

This is convenient when you're preparing oats breakfast for a family or several people.

Just reheat your oats slightly before serving with your favorite toppings, like in this vegan overnight oats with persimmon fruit.

Equipment

  • A saucepan

Ingredients

  • 1 cup rolled oats
  • ½ teaspoon cinnamon
  • ½ teaspoon ginger powder
  • pinch of salt
  • 1 cup water
  • 1 cup milk
  • 2 persimmon fruit (your favorite)

Instructions

  • In a saucepan toast the rolled oats at medium-high heat for 4 mins
  • Add the spices and salt and toast for 3 more mins, remember to stir them now and then to avoid them burning
  • Put off the heat, wait for the pan to cool then pour in the water
  • Mix well then cover and leave on your kitchen counter for the night
  • In the morning warm the overnight oats, add the milk and serve
  • Slice the persimmon fruits, garnish the overnight oats and enjoy
