Radish mango salad with nutritional yeast

This mango salad is super delicious with just a few fresh ingredients tossed together with oregano-olive oil vinaigrette. Sprinkle with nutritional yeast to add more flavor.

Oregan vinaigrette

  • 6-8 different types of radishes with their greens
  • ½ butter lettuce
  • 1 well ripped mango
  • 2 apples (optional)
  • 1 avocado
  • a small thumb of fresh ginger root
  • 2 tablespoons nutritional yeast

Instructions

Start with oregano vinaigrette

  • Mix all the ingredients in a small jar, close the jar and shake it thoroughly.
  • Set aside.

Mango salad

  • Clean the vegetables and fruits
  • Separate the lettuce leaves. If they're big, cut them into halves and put them in a salad bowl
  • Use a vegetable peeler to thinly slice the radishes
  • Prepare the radish greens by cutting off their stems
  • Cut apples and the mango into small bites.
  • Use the grater to grate the ginger root
  • Cut the avocado into two, remove the seed, then cut the flesh into pieces
  • Put all the ingredients in the salad bowl, sprinkle with nutritional yeast
  • Pour generously the oregano vinaigrette on top
  • Toss the salad together using the salad spoons
  • Serve this mango salad on its own or with some cooked grains like millet, quinoa, or buckwheat.
