Radish mango salad with nutritional yeast
This mango salad is super delicious with just a few fresh ingredients tossed together with oregano-olive oil vinaigrette. Sprinkle with nutritional yeast to add more flavor.

Ingredients
Oregan vinaigrette

cold-pressed olive oil

non-pasteurized apple cider vinegar
pinch of salt

mango salad

different types of radishes with their greens

butter lettuce

well ripped mango

apples (optional)

avocado
a small thumb of fresh ginger root

nutritional yeast
Instructions
Start with oregano vinaigrette
Mix all the ingredients in a small jar, close the jar and shake it thoroughly.
Set aside.
Mango salad
Clean the vegetables and fruits
Separate the lettuce leaves. If they're big, cut them into halves and put them in a salad bowl
Use a vegetable peeler to thinly slice the radishes
Prepare the radish greens by cutting off their stems
Cut apples and the mango into small bites.
Use the grater to grate the ginger root
Cut the avocado into two, remove the seed, then cut the flesh into pieces
Put all the ingredients in the salad bowl, sprinkle with nutritional yeast
Pour generously the oregano vinaigrette on top
Toss the salad together using the salad spoons
Serve this mango salad on its own or with some cooked grains like
millet

quinoa
, or
buckwheat.
