Tomato salad with marinated olives

This tomato salad recipe with marinated olives features yellow heirloom tomatoes. The heirloom tomatoes are super tender, mix them with a zest of marinated olives and fold them with the sweetness of an orange. You can't resist this luscious heirloom tomato salad!

Equipment

  • sharp chef's knife
  • small and big bowls
  • A small jar with a lid

Ingredients

Marinated olives

  • 100 grams canned olives
  • 1 tablespoon oregano & basil dry herbs
  • ½ tablespoon vinegar
  • 2 tablespoon Extra virgin olive oil
  • pich of salt

Orange vinaigrette

  • 2 tablespoon orange juice
  • ½ tablespoon vinegar
  • pinch sweet paprika
  • some grounded pepper
  • pinch salt
  • 2 tablespoon extra virgin olive oil

  • 1 big yellow heirloom tomato (or any color)
  • 2 medium oranges
  • sweet paprika for decoration

Instructions

Let's marinate these olives

  • Open and drain your canned olives
  • Rinse them and put them in a small bowl
  • In a jar with a lid, add all other ingredients and shake to mix well to make vinaigrette.
  • Pour the vinaigrette on the olives, mix gently then cover the bowl
  • Leave to marinate for about 1 hour

Orange vinaigrette

  • Squeeze ½ an orange to get about 2 tablespoon of juice, more will be okay..
  • In a small bowl add the juice, ½ vinegar and the rest of the ingredients
  • Whisky well and set a side

Assembling heirloom tomato salad with marinated olives

  • Clean and tap dry your heirloom tomatoes
  • Cut them according to the lines to get wedges, add these in a big bowl
  • Cut the orange and get the supreme ( read the post), bring them in the bowl
  • Bring the olives, you might not want to use all, save some for another time.
  • Fold everything gently with the orange vinaigrette.
  • Let this salad stand for at least 10 minutes so that the flavors can mix well.
  • Serve and enjoy. We used these roasted potatoes, you can use bread or just appreciate this heirloom tomato salad on its own.

Notes

  • This tomato salad recipe will be super quick if you marinate your olives way ahead
  • The longer the marinating time the better.
  • Marinated olives can be kept in you fridge up to 10 days in an air-tight jar
