Summer melon-cucumber salad with avocado

  • 1 a small cantaloupe melon
  • 1 medium english cucumber
  • 1 avocado
  • 1 lemon
  • some leaves of fresh basil or mint

Dressing

  • 1 tablespoon lemon
  • 1 tablespoon extra virgin olive oil
  • pinch of salt

Instructions

Let's start with the dressing

  • Squeeze ½ the lemon to get the lemon juice and pour it in a small bowl
  • Add the olive oil
  • Add the salt, mix well and set aside

Simple avocado-cucumber salad

  • Using your sharp knife peel the cantaloupe melon after cleaning it
  • Using a melon baller, get the melon balls and put them in a bowl
  • Clean and wipe your cucumber
  • Using the melon baller get the cucumber balls and add them to the melon
  • Get fresh basil leaves and add them to the melon cucumber
  • Sprinkle the dressing and mix well but gently
  • Serve this salad on individual plates
  • Clean and tap dry your avocado.
  • Slice it lengthwise after peeling off the skin
  • Place the avocado slices on the side of the plate and squeeze some lemon on top of the avocado

Notes

If you don't have a melon baller just slice and dice your fruits the way you desire them to be.
After getting the fruits balls, the remaining melon and cucumber can be used to make a smoothie or eaten as they are.
