Ingredients

  • a fresh ginger root (as much as you can handle)
  • 1 fresh turmeric root
  • 2 medium young zucchini (not big mature)
  • ¼ cup cilantro leaves
  • a few fresh basil leaves
  • a few rosemary leaves
  • 1 tablespoon dried oregano
  • 1 tablespoon lime or lemon juice
  • ¼ teaspoon sea salt to season
  • 1 tablespoon cold-pressed olive oil
  • 2 cups brewed green tea

Instructions

  • Brew green tea for 3 mins in hot water (NOT BOILING)
  • Clean the zucchini, herbs, and roots.
  • Squeeze the lime to get the juice.
  • Put all the ingredients in a blender and blend till smooth.
  • Taste to season.
  • Serve while still warm.

Notes

  • This healing zucchini soup is unique because its flavor and taste will depend on the amount of ingredients used. Extra ginger will add spicy notes, more turmeric may offset the flavor, strong green tea will alter the taste, and too much oregano might be overpowering.
