Ingredients

  • 1 cup white cauliflower small florets
  • 1 cup green cauliflower small florets
  • 1 cup purple cauliflower small florets
  • 1 medium size bell pepper (diced)
  • ½ cup fresh coconut flesh (shredded)
  • 2 medium size apples (diced)
  • a handful of roasted cashew nuts
  • 1 small red onion (diced
  • ½ teaspoon dry oregano ( optional)
  • 1 teaspoon dry wild garlic (optional)
  • a small piece of red pepper (optional)
  • 1 lemon
  • 2 tablespoon olive oil
  • 1 tablespoon vinegar (I used apple cider)
  • pinch of salt

Instructions

  • Bring all the veggies, fruits, and nuts in a large bowl
  • In a small bowl, mix the oil, vinegar, and salt. Mix well to make a vinaigrette
  • Pour the vinaigrette on the veggies and fruits in the bowl
  • Squeeze the lemon all over and give this salad a good toss
  • Let the salad stand for 5 mins, toss again and serve

Notes

  1. If you are making this salad ahead of time, don't add the lemon. Add it at least 5-10 mins before serving. Otherwise, you can use other sauce that doesn't contain lemon
