Ingredients

  • ½ teaspoon coriander seeds
  • ½ teaspoon cummin seeds
  • ¼ teaspoon mustard seeds
  • 3-5 cloves
  • 1 kg/pound medium onions
  • 4-6 medium shallots
  • 2 tablespoon coconut/olive oil
  • a pinch of salt
  • a small piece of fresh ginger (grated)
  • a small piece of fresh turmeric (grated)
  • some cayenne pepper (optional)
  • some dried oregano
  • 1-2 unpasteurized apple cider/balsamic vinegar/lemon

Instructions

  • Clean, peel and slice the shallots & onions (read the blog post)
  • Heat a large skillet and roast the seeds till fragrant. 2-3 mins
  • Add the onions and spread them evenly in the skillet. Cover to cook on medium heat for 3 minutes.
  • Add the oil and stir the onions for about 1 minute. Spread them evenly and cover the skillet to let cook the onions for 3 minutes.
  • Add salt and pepper. Stir and cover again to cook for 2-3 minutes.
  • Remove from the heat, and add ginger, turmeric, and oregano. Stir well and cover the skillet.
  • Serve the onions when still warm. Add vinegar and stir well before serving.
