a small piece of fresh ginger (grated)
a small piece of fresh turmeric (grated)
some cayenne pepper (optional)
some dried oregano

unpasteurized apple cider/balsamic vinegar/lemon
Instructions
Clean, peel and slice the shallots & onions (read the blog post)
Heat a large skillet and roast the seeds till fragrant. 2-3 mins
Add the onions and spread them evenly in the skillet. Cover to cook on medium heat for 3 minutes.
Add the oil and stir the onions for about 1 minute. Spread them evenly and cover the skillet to let cook the onions for 3 minutes.
Add salt and pepper. Stir and cover again to cook for 2-3 minutes.
Remove from the heat, and add ginger, turmeric, and oregano. Stir well and cover the skillet.
Serve the onions when still warm. Add vinegar and stir well before serving.
