Spring onions cherry tomato soup

Ingredients

  • 2 shallots
  • 1 bundle of fresh spring onions (not overgrown)
  • 1 tablespoon cold-pressed olive oil
  • a thumb of ginger
  • small fresh turmeric root
  • 3 cloves of garlic
  • a hanful of cherry tomatoes
  • 3 cups vegetable broth (1cup/person)
  • a pinch of salt
  • some pepper
  • some fresh basil leaves or herbs of your choice
  • 2 tablespoon nutritional yeast (optional)

Instructions

  • Clean all your veggies
  • Dice the shallots together with the fresh onion bulbs
  • Put them in a saucepan with oil and cook them at a medium heat covered for about 4 mins
  • In the meantime, grate ginger, turmeric, and garlic together. Chop the tops of the green onions
  • Add all in the saucepan, and stir well. Cover for 3 mins
  • Add the cherry tomatoes and stir again, add salt, and the vegetable broth
  • Increase the heat till the boiling takes place then lower the heat to medium
  • Let the soup simmer for 3 mins, the ideal is to leave the cherry tomatoes whole, just slightly cooked
  • Cut off the heat, add the rest of the ingredients, cover and let it cool before serving
  • Enjoy this soup with rice, bread, quinoa, millet, baked/steamed potatoes or sweet potatoes
