Clean all your veggies
Dice the shallots together with the fresh onion bulbs
Put them in a saucepan with oil and cook them at a medium heat covered for about 4 mins
In the meantime, grate ginger, turmeric, and garlic together. Chop the tops of the green onions
Add all in the saucepan, and stir well. Cover for 3 mins
Add the cherry tomatoes and stir again, add salt, and the vegetable broth
Increase the heat till the boiling takes place then lower the heat to medium
Let the soup simmer for 3 mins, the ideal is to leave the cherry tomatoes whole, just slightly cooked
Cut off the heat, add the rest of the ingredients, cover and let it cool before serving
Enjoy this soup with rice, bread, quinoa, millet, baked/steamed potatoes or sweet potatoes
