This weight-loss detox soup is a quick and easy way to cleanse your body and boost your immune system. I use a variety of vegetables and herbs to create a tasty soup packed with vitamins and minerals.

Equipment

  • kitchen knife
  • vegetable peeler or mandolin
  • garlic press
  • Big salad bowl

Ingredients

  • 1 clove of garlic
  • ¼ red beet
  • ¼ orange beet
  • ¼ Chioggia beet
  • a small piece of black radish
  • ¼ piece of pink radish
  • 1 apple
  • a small fresh ginger root
  • a small fresh turmeric root
  • 1 witloof/Belgium endive (medium size)
  • ½ teaspoon Dijon mustard paste with seeds
  • 1 tablespoon fermented veggies eg. sauerkraut
  • 1 tablespoon apple cider vinegar
  • 2 tablespoon cold-pressed oil of choice
  • a pinch of sea salt
  • 2 cups hot water

Instructions

  • Clean and tap-dry the veggies, fruits, and roots.
  • Start by pressing the garlic, and put it in a salad bowl
  • Using a mandolin or a vegetable peeler, slice thinly the beets and radishes. Put these into the salad bowl with garlic.
  • Dice the apple, and chop the endive. Add them to the bowl.
  • Using a grater, grate both ginger and turmeric and then add them to the bowl.
  • Heat the water without letting it boil.
  • Chop the herbs, and place the remaining ingredients (except the fermented) in the salad bowl.
  • Pour the hot water, and use a spoon to gently mix the ingredients.
  • Cover the bowl with a lid or kitchen towel, and let the flavors infuse for about 10 mins.
  • Taste for seasoning. Serve and enjoy.

Notes

  • I use lots of beets and radishes to make this soup. If you are new to these ingredients, use less.
  • This detox soup can be made in advance. Store it in an air-tight container and keep it in your fridge. However, do not leave it for longer than a day, as the enzymes and vitamins will start degrading.
  • Keep in mind that this soup is an a idea, customize it by adding more veggies or substitute some.
