Ingredients

  • 10 french breakfast radishes
  • 1 A handful of seedless green grapes
  • ½ yellow bell pepper (seeds removed)
  • ½ red bell pepper (seeds removed)
  • 1 piece of fresh coconut meat (not so big)
  • chive or herbs of your choice
  • ½ lemon
  • 1 teaspoon apple cider vinegar
  • 2 tablespoon cold-pressed oil
  • salt and pepper

Instructions

  • Clean all your veggies and fruits
  • Using a vegetable peeler, slice thinly the radishes and coconut meat
  • Dice the bell peppers into small cubes
  • Using a sharp knife slice the grapes
  • Chop the herbs
  • Put all the veggies and fruits in a salad bowl
  • Squeeze the lemon all over
  • Mix the vinegar, oil, salt, and pepper in a small jar, shake to mix
  • Pour the vinaigrette over the radishes
  • Sprinkle with salt and black pepper
  • Mix everything gently then serve this salad as an appetizer.

Notes

  • You can use any spring/summer radishes
  • Using the vegetable peeler, peel off the coconut skin if it hasn't been removed. You can also enjoy the coconut with its skin
  • If you can't get seedless grapes, you can use regular grapes, only you'll have an extra job to remove the seeds.
  • This salad can be stored in a fridge for up to 3 days, but it'll lose vitamin C with storage.
