Ingredients

buckwheat groats

rolled oats

raisins (soak them in a little water for about 20mins if you don't have a high-speed blender )

grated parsnip (cut into small cubes if you have a very high-speed blender)

coconut milk (or milk of your choice)

baking powder

cooked frozen blueberries for topping (optional)
Instructions
Put raisins in a measuring cup and cover them slightly with water if your blend is not a high-speed
Grate the parsnip to help your blender if it's not a high-speed
Add the ingredients starting with the dry ones
Blend 1st with a cup of milk, then add gradually the rest of the milk
Blend into a smooth batter, it should be thick but running.
Let the batter stand for 10 mins
Cook your pancakes; flip when most bubbles have popped
Serve warm with slow-cooked frozen blueberries or any fruit of your choice

Notes
Choose young parsnip as the mature ones are very fibrous
Grate the parsnip if you don't have a high-speed blender, otherwise, just cut it into pieces
If you've a good high-speed blender you can blend all the ingredients without soaking the raisins.
Take any milk of your choice, for an anti-inflammatory diet, you need to avoid dairy.
Note that different types of milk will yield pancakes with different textures; eg soy milk will not give as soft pancakes the way coconut milk will.
