Baked tofu in smoked paprika

Equipment

Ingredients

Smoked paprika marinating sauce

  • 3 tbs baobab powder
  • 1 tbs smoked paprika
  • cayenne pepper
  • pinch of salt
  • 160 ml freshly squeezed orange juice (about 2 oranges)

Baked tofu

  • 200 grams extra firm tofu

Instructions

  • Start by pressing the tofu with kitchen paper or towel to get rid of excess water
  • In a bowl bring all the dry ingredients for the marinating sauce
  • Add the orange juice gradually as you keep on mixing the sauce
  • The sauce should be creamy and not flowing just like a yogurt
  • Insert a very sharp thin knife or a toothpick in the tofu without breaking it, this will facilitate the marinating sauce to penetrate in the tofu
  • Cut the tofu into rectangles or any shape you'd prefer
  • Bring the tofu in the bowl, mix gently, one by one till all is covered with the sauce
  • Cover the bowl and store in the fridge for at least 8 hours
  • Transfer the marinated tofu gently into the baking pan and bake @180° for about 50-60 mins
  • You can grate un lemon zest if you have a lemon in the house (it's optional)
  • Serve while warm or cold.
