Crunchy caramelized buckwheat groats

  • A large pan


  • 2 cups raw buckwheat groats
  • 2 tbs coconut oil
  • 2 tbs unprocessed brown sugar
  • 1 teaspoon gingerbread spice or cinnamon & ginger
  • pinch of salt
  • 1 cup hot water
  • 4 well-ripened pears
  • 2 passion fruits (optional)


  • Heat your pan at high heat then put the groats
  • Toast the groats, and be careful not to burn them, low the heat if you see the groats becoming dark too fast
  • Toasting will take relatively 8 mins
  • During this time slice finely the pears
  • Add spices and salt, toast again for 2 mins
  • Add oil, stir well to make sure all groats are coated with oil toast for 2 mins
  • Add sugar and do the same, stir, stir and stir till all the groats are coated and the sugar starts sticking on the pan this will take about 5 mins
  • Add a splash of water, be very careful, the pan is very hot, so gather the groats on one side to make a heap, then pour some water, not all at once, stir, then repeat till you use all the water
  • Cut off the heat, add fruits of your choice and cover the pan. Here I used pears & passion fruit
  • Leave the crunchy caramelized buckwheat groats to cool for about 10 mins or more
  • Serve warm, enjoy.

You really have to be next to the pan when caramelizing the buckwheat groats, otherwise they'll burn very easily.
You can also make this breakfast in the evening and just warm it in the morning, in this case don't add the fruits in the evening.
