Ingredients

Steamed cauliflower

  • 1 head of small cauliflower
  • 2 cups boiling water
  • pinch of salt

seasoning herbs & spices

  • 1 tablespoon fennel and cumin seeds
  • 1 small piece fresh turmeric
  • 1 thumb of fresh ginger
  • 3 cloves of garlic
  • 2 medium scallions (green onions)
  • 2 tablespoon extra virgin olive oil
  • 1 cup chives diced
  • 1 cup cilantro leaves you can add more
  • 1 teaspoon Dijon mustard seeds sauce
  • 1 piece of fresh chilli
  • pinch of salt

Instructions

  • Bring water to boil. if you have a boiler if not in a saucepan.
  • Clean and cut your cauliflower into medium or small florets.
  • Place a basket steamer into a saucepan with heating water
  • Place the florets into your steamer.
  • Cover and steam at medium-high heat for about 6-8 minutes.
  • Check on your cauliflower by inserting a fork in one of the florets
  • Don't over cook them, they should remain firm
  • Cut off the heat, remove the steaming basket with florets from the water
  • Let them cool before manipulating them

Cook the seasoning

  • During that time, place fennel and cumin seeds in another saucepan and turn on the heat to medium-low. 
  • Grate or mince the ginger, turmeric and 2 cloves of garlic together
  • Dice the onions.
  • Bring the garlic, ginger, turmeric, and onions into the saucepan with fennel-cumin seeds.
  • Increase the heat to medium-high as you stir everything together.
  • Add the oil and stir well, cover to cook
  • Cook them as you stir now and then till the onions are fragrant; about 5 minutes
  • Meanwhile, clean & chop the scallion, the chives, the remaining garlic and get the cilantro leaves. 
  • Clean and chop the chili, discard the seeds if you don't like it too hot!
  • When the onions are cooked, cut the heat,
  • Bring the steamed cauliflower into the saucepan with onions, add the rest of the ingredients and stir them together gently not to break the florets, till all florets are covered with the seasoning
  • Now set your table, serve and enjoy this extra delicious steamed cauliflower.
