Clean all your veggies. Mince the garlic and set it aside. Steam the potatoes with broccoli & romanesco
Slice the carrots very thinly using a very sharp knife if not use a mandolin. Do the same with onions.
After the potatoes, broccoli & romanesco have steamed, about 10 mins let them cool.
During that time, add diced onions in a pan and let them cook for 2 mins on moderate heat
Add in the ginger, garlic and other spices and stir, stir for a minute, bring in the carrots and stir for 2 mins. You can add a tbs of the steaming water. Cut off the heat.
Chop your herbs.
Squeeze the lemon in a small bowl, add the olive oil, and salt to make a vinaigrette.
Serve your veggies in a plate or bowl, and sprinkle the vinaigrette or all over the dish.
