Ingredients

  • 1 big English cucumber (diced)
  • 1 yellow squash (summer squash) diced
  • 2cups 240gm cooked cold white quinoa (mixed quinoa will do too)
  • 5 medium tomatoes or 3 big ones
  • 2cups 250gm fresh strawberries ( very small sizes if not chopped)
  • some red currants (depending if you like their acidity)
  • a handful of almonds (chop them using a knife)
  • 2cups 100gm chopped frsh herbs of your choice
  • 2-3 avocado (peeled & cubed)
  • 1 lemon to drizzle on the avocados

Instructions

Balsamic Vinaigrette

  • Put all the ingredients in a small jar with a lid, close it tightly and shake the jar vigorously. Otherwise, use a small bleder to blend.

Quinoa Salad

  • Prepare the ingredients in the order of appearing above
  • Bring them all in a large salad blow
  • Squeeze the lemon all over the avocados to avoid oxidation
  • Pour the balsamic vinaigrette on the salad and using salad spoons, gently mix the salad without overdoing and avoiding breaking the fruits.
  • Serve and enjoy this quinoa salad alone or with some healthy bread.

Notes

Notes:
  1. Make a huge salad to replace a meal.
  2. The salad goes well on itself, it's high in healthy fat and proteins so no need of serving it as a side dish.
  3. If any leftovers, consume them the next day at most.
