Vegan overnight oats with kiwi fruit

Equipment

  • A small saucepan

Ingredients

  • 1 cup (90g) rolled oats
  • 1 teaspoon all spices (optional)
  • pinch of salt
  • 2 cups (480ml) plant-based milk
  • 1 banana
  • 2 kiwi fruits
  • 1 teaspoon agave/maple syrup

Instructions

  • In a small saucepan toast your rolled oats for about 7 mins after adding spice and salt
  • You can smell the fragrant of toasting oats, cut off the heat
  • Let the saucepan cool for about 2 mins before adding milk
  • Stir gently, cover for the night or at least for 2 hours
  • In the morning slice kiwi into fine disks
  • Heat a pan and add the syrup before then add the kiwifruit slices
  • Warm them for a minute or two then using a spoon turn them gently on the other side
  • Cook then for a minute and serve them on overnight oats
  • Add slices of banana and enjoy

Notes

  • I don't include resting time, for it can be short or long depending on how long you sleep and how early you do take your breakfast.
  • Kiwi fruit becomes very fragile when cooked, so hold them with care
